Cook bacon: Place 8 slices thick cut beef bacon in a medium skillet over medium heat. Cook for ⏱️ 10-12 minutes, turning until slightly crisp. Drain on paper towel-lined plate.

Mix dip: In a medium bowl, combine 2 cups plain Greek yogurt, 1/4 cup maple syrup, 2 tablespoons brown sugar, 1 teaspoon vanilla, and 1/8 teaspoon maple flavoring. Whisk until smooth.

Combine & garnish: Chop cooled bacon into small pieces. Fold two-thirds of bacon into yogurt mixture. Transfer to serving dish. Sprinkle remaining bacon over top.

Prepare apples & serve: Just before serving, cut Granny Smith apples into thin slices. Toss with juice of 1 lemon to prevent browning. Arrange apple slices around dip and serve.
