Whisk together milk, eggs, vanilla, and 1 tablespoon maple syrup in a bowl. Whisk in flour and salt. Whisk in butter. Fold in bacon. Let batter rest for ⏱️ 15 minutes while preheating oven.

Place a popover pan in the oven and preheat to 425°F. Once oven has preheated, remove the pan and lightly grease cups. Transfer batter to pan cups, dividing evenly.

Bake ⏱️ 15 minutes. Without opening the oven door, reduce temperature to 350°F. Bake until golden brown and puffed, 14 to ⏱️ 16 minutes. Lightly brush tops with remaining 2 tablespoons maple syrup. Serve immediately.
