In a small bowl, mix 1 tbsp of gelatin with 2 tbsp of water and set it aside to bloom for ⏱️ 5 minutes.

In a small pan, gently heat the mango puree and sugar over low heat, stirring until the sugar completely dissolves. Do not boil.

Remove the pan from the heat and add the bloomed gelatin. Stir continuously until the gelatin is fully dissolved into the warm mango mixture.

Let the mango mixture cool down to room temperature.

Carefully pour the cooled mango jelly over your set panna cotta or dessert of choice.

Refrigerate for at least ⏱️ 1-2 hours, or until the jelly is firm to the touch.
