Mango Cookies
Made from only 4 ingredients, these raw mango cookies couldn't be more simple to make and taste delicious with the fruity mango flavour and crunchy almonds. We love to drizzle some melted dark chocolate over the top of these cookies at the end, but they also taste delicious on their own.

Place the dried mango in a bowl and cover with boiling water. Leave to soak for ⏱️ 10 minutes in order to soften the mango.

Once soft, drain the mango and place into a food processor. Add the oats and almond butter and blend until the mixture becomes thick and sticky.

At this point, add the almonds and blend again until they break down and the mixture comes together to form a thick ball.

Place the mixture in the fridge for ⏱️ 30 minutes.

After ⏱️ 30 minutes, scoop out equal spoonfuls of the mixture and shape into cookie shapes using your hands - this mixture should make around 7 cookies.

If using chocolate, simply melt the chocolate over a very low heat, constantly stirring to ensure the chocolate doesn’t burn. Once melted, spoon the chocolate over the top of the cookies and leave to one side to set.
