These delicious mango and chia breakfast bowls are perfect for the summer months. It’s easy to make, and a super refreshing, gut-friendly way to start your day. Top with whatever you like, but we love the crunchy, toasted coconut topping here for a great texture, as well as some sliced banana to top up your plant intake.

Warm a small frying pan set over medium–low heat; add the almonds, seeds, coconut flakes, cinnamon and maple syrup (if using); cook gently for 4–⏱️ 5 minutes until fragrant and just golden. Remove from the heat and set aside to cool.

Next, place the mango, coconut milk, lime zest, lime juice, turmeric (if using) and a pinch of sea salt (if using; this helps to balance the sweetness) in a high-speed blender; blitz until smooth. Stir in the chia seeds and leave to stand for a few minutes to thicken.

To serve, pour the mango mixture into bowls and decorate with the banana and toasted coconut topping. Serve immediately.
