Preheat your oven to 400°F. Line a large baking sheet with foil for easy cleanup.

Scrub the sweet potatoes, pat them dry, and carefully cut them in half lengthwise.

In a medium bowl, toss the rinsed and drained chickpeas with olive oil, cumin, coriander, cinnamon, and smoked paprika until well coated.

Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Rub the sweet potato halves with a little oil and place them face down on the same sheet.

For the topping, combine the diced cherry tomatoes, minced parsley, chopped red onion, and lemon juice in another small bowl.

Once out of the oven, flip the sweet potatoes face up and gently mash the insides with a fork. Top generously with the crispy chickpeas, drizzle with the garlic herb sauce, and finish with the fresh tomato salad. Serve immediately.
