Loaded Mexican Chips
These are the perfect pre-feast snack when you’ve got lots of friends over, or an ideal movie night option. I love loading mine with sautéed paprika tomatoes, cooked onions, peppers, salsa and chopped avocado as all of the flavours go together so well. They’re delicious served with veggie tacos, and always seem to disappear in seconds.

📝 Preparation Steps

Place a pan over a medium heat and add a drizzle of olive oil.

Once warm, add the onions and a pinch of salt and pan fry for ⏱️ 10-15 minutes until soft.

Once soft, add in the tomatoes, peppers and smoked paprika and cook for another ⏱️ 5 minutes, stirring continuously, until soft.

Once everything has cooked, lay the tortilla chips out in a large bowl, and top with the cooked vegetables, avocado, spring onions and dollops of tomato salsa before serving.
