Peel your three pounds of russet potatoes. Chop them into uniform one inch pieces. Place the chopped potatoes in a large pot and cover with cold water by about two inches.

While potatoes cook, place six slices of bacon in a large skillet in a single layer. Cook over medium heat until crispy (about eight minutes), flipping halfway. Transfer to a paper towel-lined plate, cool, and crumble.

In a medium saucepan, combine a half cup of whole milk, six tablespoons of unsalted butter, one teaspoon of kosher salt, and a quarter teaspoon of black pepper. Warm over medium heat, stirring until butter is melted (two to five minutes). Remove from heat.

Drain cooked potatoes through a heatproof colander and let steam escape for a few minutes. Return warm potatoes to the pot.

Use a potato masher to mash until mostly smooth. Pour the warm milk mixture into the mashed potatoes. Add the crumbled bacon, shredded cheddar cheese, one cup of sour cream, and most of the chopped chives (save about one tablespoon for garnish).
