Preheat oven to 375°F (190°C). Peel, chop, and rinse potatoes.

Place potatoes in a large pot, cover with salted water, and boil until fork-tender. Drain well and return to the warm pot to evaporate excess moisture.

Add milk, butter, sour cream or cream cheese, garlic, salt, and pepper to the potatoes. Mash until creamy. Stir in 1 cup of the shredded cheddar cheese.
