Heat the grill to medium heat. Cut 4 sheets of heavy-duty foil, large enough to wrap around the salmon and veggies.

Place each 4 (4-ounce) salmon fillets on the center of each aluminum foil sheet and divide the 2 small zucchini chopped, 1 pound asparagus chopped, 2 small yellow squash chopped, 1 small red onion thickly diced, and 1 sliced red pepper into each packet.

In a small bowl add 6 tablespoons melted unsalted butter, 1 tablespoon lime juice, and zest of one lime and salt and pepper, and mix. Pour evenly into each packet.

Cut the 1 lime into wedges and add a wedge to each packet. Bring the sides of the foil up and around the salmon and veggies and seal the edges, leaving room in the packets for heat circulation and expansion.

Place the salmon packets onto the grill and grill for ⏱️ 13-15 minutes flipping at about ⏱️ 7 minutes. To serve, carefully open packets and add fresh parsley for garnish.
