Preheat oven to 160°C fan / 350°F. Place the sweet potato on a baking tray; lightly coat with olive oil and season with salt. Bake for 12–⏱️ 15 minutes, until tender when pierced with a fork.

When the sweet potato is almost cooked, heat the lentil bolognese in a saucepan over medium heat until warmed through. Stir in the spinach and cook for about ⏱️ 1 minute, until the spinach has wilted.

Serve in a bowl with the roasted sweet potato. Top with fresh basil, chilli flakes and nutritional yeast, if desired. Eat immediately.
