Place the onion, garlic, celery, peppers, mushrooms, carrots and a pinch of salt in a pan with a drizzle of olive oil. Cook over medium–high heat for ⏱️ 10 minutes until soft.

Add the lentils, tinned tomatoes, tomato purée, oregano and 150ml / 5 fl oz water; stir well. Bring up to a simmer.

While the sauce is cooking, place the pasta in a pan of salted water over medium heat; cook according to the packet instructions.

Once cooked, reserve some of the cooking water and drain the pasta.

Once the sauce is ready, add the drained pasta into the pan, along with a little of the reserved cooking water, if needed.
