📝 Preparation Steps
1
Preheat your oven to 425°F. In a large mixing bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, garlic powder, and paprika. Spread them in a single layer on a large baking sheet and roast for ⏱️ 20 minutes.

While the potatoes cook, toss the broccoli florets with 2 tablespoons of olive oil and salt. After ⏱️ 20 minutes, remove the baking sheet from the oven, push the potatoes to one side, and add the broccoli to the other side. Return to the oven and roast for another ⏱️ 15-20 minutes until potatoes are golden and broccoli is tender.

In a skillet over medium heat, melt the unsalted butter. Add the minced garlic and cook for about one minute until fragrant. Stir in the fresh lemon juice and a pinch of salt. Keep the heat low to prevent the garlic from burning.

4
Place the salmon fillets skin-side down in the hot butter. Cook for ⏱️ 4-5 minutes without moving to get the skin crispy. Flip the fillets and cook for another ⏱️ 3-4 minutes, or until the fish is flaky and cooked through.
5
Remove the roasted vegetables from the oven. Serve a portion of potatoes and broccoli on each plate alongside a salmon fillet. Drizzle the remaining lemon garlic butter sauce from the skillet over everything. Garnish with fresh parsley and lemon slices.
