Warm the oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook, stirring, until the onions have softened. Add in the garlic and cook until fragrant.

Add the chicken broth, chicken breast, thyme, bay leaf, salt, and pepper. Bring the soup to a boil, cover, and reduce the heat to a gentle bubble. Simmer for ⏱️ 15 minutes.

Remove the chicken from the pot and shred it with two forks. Add the shredded chicken along with the dry orzo back to the pot.

Remove and discard the thyme sprigs and bay leaf.
