Lazy Chocolate Chunk Banana Bread
Soft, gooey, chocolatey, and deliciously simple. This is a little slice of heaven and the tastiest way to use up those really ripe bananas. Simply combine all the ingredients in a food processor and pop in the oven. Swap walnuts for pecans if you prefer, or your favourite nuts will work just as well.

Preheat the oven to 160°C fan / 350°F. Line a 1kg / 2 lb loaf tin with baking parchment.

First, add the banana, dates, olive oil, yoghurt and vanilla paste to a food processor; blitz until the dates have mostly broken down.

Sift the plain flour, spelt flour and baking powder into the food processor; then add the ground flaxseeds and salt. Pulse very briefly, for about 2–⏱️ 3 seconds, until the flour is just mixed in.

Add the chocolate (if using) and walnuts (if using), reserving a small amount for topping. Pulse again until just combined.

Pour the mixture in the tin and scatter over the remaining chocolate and walnuts (if using). Bake for 45–⏱️ 50 minutes, until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool on a wire rack before serving. Delicious with a cup of coffee.
