Preheat oven to 350 degrees. Line two baking sheet with parchment paper.

Add butter and brown sugar to a small saucepan and cook over medium heat whisking occasionally until the butter is melted.

Pour the butter / sugar mixture into a large bowl. Stir in the vanilla, oats, almond flour, salt and egg white. Mix to combine.

Portion heaping teaspoons (NOT tablespoons) onto the prepared baking sheets.

Bake for ⏱️ 6-8 minutes or until golden brown along the edges. Let them cool on the baking sheet for a couple of minutes before transferring them to a cooling rack to cool completely.The cookies will harden and crisp up as they cool.

Dip the cooled cookies one at a time into the chocolate mixture and sandwich another cookie on top of the chocolate to create a cookie sandwich with the chocolate in the center. Repeat with the remaining cookies and enjoy!

Melt the chocolate: Add the chocolate chips and coconut oil to a microwave safe bowl. Cook for ⏱️ 40 seconds, stir and cook for an additional ⏱️ 20 seconds or until melted.
