To make the crust:

Preheat oven to 350 degrees. In a food processor, blender, or in a plastic bag with a rolling pin, finely crush graham crackers (you will have about 2 cups crumbs).

In a medium bowl, combine graham cracker crumbs, butter, and sugar. Pour into a 9-inch pie plate. Using the bottom of a measuring cup, press the crust evenly and firmly into the bottom and up the sides of the pan.

Bake until golden brown and fragrant, about 10 to ⏱️ 12 minutes. Remove from oven and cool on a rack (do not turn off oven).

To make the filling:

Whisk together sweetened condensed milk, egg yolks, lime juice, and lime zest until smooth. Let the filling sit at room temperature until slightly thickened, about ⏱️ 15 minutes.

Pour thickened filling into warm pie crust. Bake until center is firm but slightly jiggly, about 15 to ⏱️ 20 minutes. Transfer to wire rack and cool ⏱️ 1 hour.

Cover pie loosely with plastic wrap and refrigerate until filling is chilled, at least ⏱️ 1 hour or up to 3 days.

For best results, chill metal mixing bowl and metal whisk in freezer for 10 to ⏱️ 15 minutes. Combine cream, sugar, and vanilla in mixing bowl and beat until soft peaks form, about 3 to ⏱️ 4 minutes.

Spread whipped cream over the top of pie in a thick, even layer, or pipe around the edges of the pie. Garnish with thin lime wheels or lime zest if desired.
