Heat the heavy cream, almond milk, cinnamon, nutmeg, and vanilla extract in a saucepan over medium-low heat and simmer for ⏱️ 2-3 minutes.

Whisk together egg yolks and powdered erythritol in a separate bowl until blended.

Slowly pour the heated cream mixture into the bowl, whisking continuously. Return the combined mixture to the saucepan.

Cook the mixture until it reaches a temperature of 160-165°F (70-75°C), usually about ⏱️ 3-4 minutes. Let it cool down to room temperature.

Once cooled, cover the mixture and refrigerate it overnight to chill thoroughly.

After chilling, strain the eggnog through a fine sieve or milk bag to remove any solids.
