Preheat oven to 200°C fan / 400°F. Place the butternut squash on a baking tray and drizzle with olive oil and a pinch of salt. Cook for 35–⏱️ 45 minutes until soft.

Meanwhile, place the kale on a separate baking tray and drizzle with olive oil and a pinch of salt; cook with the butternut squash for the last ⏱️ 5 minutes until crispy.

Once the kale and butternut squash are cooked, remove from the oven and add them to a large bowl, along with the remaining ingredients. Toss together and serve.
