Heat oil in a medium skillet over medium heat. Add garlic and cook until fragrant, about ⏱️ 1 minute. Add breadcrumbs and stir to coat. Cook, stirring occasionally, until golden brown, 5 to ⏱️ 7 minutes. Season with salt and black pepper.

Cook spaghetti in a large pot of salted boiling water until al dente according to the package directions; drain.

Meanwhile, combine white wine, white wine vinegar, and shallots in a large skillet. Bring to a boil, then reduce heat and simmer until liquid is reduced by half, 5 to ⏱️ 7 minutes. Reduce heat to low and slowly whisk in butter, a few pieces at a time, until combined. Continue cooking and whisking until the sauce is emulsified. Stir in the Espelette pepper and tarragon. Season with salt and black pepper.

Add spaghetti, crab, and lemon zest and juice to sauce and cook over low heat, stirring gently, until crab is warmed through. Serve topped with the breadcrumbs and garnished with herbs.
