Jackfruit Burgers
Jackfruit is such an amazingly versatile ingredient, and has the perfect texture for burger recipes. We seasoned ours with cumin, chilli powder and harissa paste, which adds delicious spice and smokiness.

Drain and rinse the jackfruit. Heat a drizzle of oil in a pan over medium heat. Once warm, add the onion and garlic and cook for ⏱️ 10 minutes until soft.

Add the spices and cook for another ⏱️ 3 minutes, before adding the tomato purée and harissa paste; cook for ⏱️ 5 minutes.

Reduce the heat and add the jackfruit. Mix really well to ensure everything is coated in the spices. Season with salt and cook for 20–⏱️ 25 minutes, constantly stirring.

Once the jackfruit is really soft, pull it apart using a large spoon or fork.

Allow to cool slightly before shaping into burgers. Place them on a tray and put it in the fridge for ⏱️ 30 minutes to allow the burgers to firm up.

Once ready to serve, pan-fry the burgers in sunflower oil about 3–⏱️ 4 minutes on each side until brown.
