Cook the sausage in a large saucepan over medium-high heat, breaking it apart as it cooks, until cooked through, and set aside.

Add the butter to the pan and let it melt before adding the onion, carrots, and celery, and cooking until tender, about ⏱️ 7-10 minutes.

Add the garlic, fennel and red pepper flakes and mix before sprinkling in the flour and cooking for ⏱️ 2-3 minutes.
