Italian Lentil Soup (Vegetarian)

Lentils are traditionally eaten on New Year’s Day for good luck, and this easy vegetarian soup is a great way to easy back into cooking after the holidays. It's low effort, high reward, and makes the perfect reset after weeks of rich meals.

Pour the olive oil in a large pot or Dutch oven over medium heat.

Add the onion, carrots and celery, then cook until they soften but don’t take on any color, about ⏱️ 7 minutes. Add the garlic and stir until fragrant, about ⏱️ 30 seconds to a minute.

Add the lentils, crushed tomatoes, water or broth, bay leaf, red pepper flakes, Italian seasoning, oregano and Parmesan rind (if using). Season to taste with salt and black pepper, then stir to combine.

Bring the mixture up to a boil, then lower to a simmer and cook over the lowest heat until the lentils are tender, about 30 to ⏱️ 40 minutes.

Stir in the kale and simmer until it softens, about ⏱️ 8 minutes. Remove the bay leaf and Parmesan rind.

Taste and adjust the seasoning with more salt and pepper as needed

Ladle into bowls and finish with freshly grated Parmesan cheese.
