For the cake: Preheat the oven to 350°F. Grease and flour three 9-inch round cake pans.

In a stand mixer fitted with a whisk attachment, whip the egg whites on medium-high speed until stiff peaks form, 2 to ⏱️ 3 minutes. Transfer the whipped whites to a medium bowl and wipe out the stand mixer bowl.

In a stand mixer fitted with a paddle attachment, cream together the butter, vegetable oil, and 1 cup of the granulated sugar on medium-high speed until light and combined, about ⏱️ 2 minutes. Add the egg yolks, vanilla, and coconut, mixing on low, until combined.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

With the mixer on low, alternate adding the flour mixture and the buttermilk, starting and ending with the dry mixture. Mix until just combined. Remove the bowl from the mixer and add the egg whites, carefully folding them in by hand with a rubber spatula. Divide the batter between the prepared pans, then sprinkle the top of each with 1 tablespoon granulated sugar.

Bake until the cakes are golden brown around the edges and a toothpick comes out clean, 20 to ⏱️ 25 minutes. Cool for ⏱️ 15 minutes in the pans, then turn the cakes out onto cooling racks and allow to cool completely, about ⏱️ 30 minutes.

For the frosting: In a stand mixer fitted with a paddle attachment, cream together the cream cheese, butter, and vanilla on medium-high speed until light and creamy, 2 to ⏱️ 3 minutes. Gradually add the powdered sugar, mixing on low until incorporated, then increase the speed to medium-high and beat until light and fluffy, about ⏱️ 3 minutes. Stir in the walnuts and coconut.

Spread 1 tablespoon of the frosting on a cake stand or platter (to keep the cake from sliding while you decorate) and place 1 cake layer on top. Spread with about 1 1/2 cups of frosting. Repeat with a second layer of cake and 1 1/2 cups of frosting, then top with the remaining cake layer and another 1 1/2 cups frosting. Use the remaining frosting to cover the sides of the cake.

Chill until the frosting is set, about ⏱️ 30 minutes, before slicing.
