Preheat the oven to 300°F. Grease a 9-by-13-inch baking pan with canola oil.

In a medium saucepan, cover the prunes with water by about 1 inch. Bring to a boil over medium-high heat and cook until soft and mashable, about ⏱️ 8 minutes. Remove from the heat, drain, and mash with a fork on a plate or cutting board. Set aside.

In a large bowl, mix together the sugar, eggs, and canola oil. In a separate medium bowl, sift together the flour, allspice, baking soda, cinnamon, and nutmeg. Stir the flour mixture into the oil mixture. Add the buttermilk and vanilla and stir gently until just combined. Fold in the mashed prunes. DO NOT OVERMIX!

Pour the batter into the prepared baking pan and smooth with a spatula. Bake until lightly golden and a wooden pick inserted in the center comes out with a few moist crumbs, 35 to ⏱️ 40 minutes. DO NOT OVERBAKE OR INY WILL PADDLE YOUR BOTTOM.

When the cake has ⏱️ 5 minutes remaining, make the icing. In a medium saucepan, stir together the sugar, buttermilk, butter, corn syrup, baking soda, and vanilla over medium heat and bring to a slow boil. Boil without stirring until the icing starts to turn dark, 5 to ⏱️ 7 minutes. Do not allow the icing to reach the soft ball stage; the icing should be caramel in color, but not sticky like caramel. The icing should be easily pourable. Make sure the sugar does not get hotter than 230°F. Remove the icing from the heat and stir it until any air bubbles disappear and it comes together.

Remove the cake from the oven and pour on the icing immediately.

Allow the cake to rest on the counter for at least ⏱️ 15 minutes. Serve warm.
