Combine the hot sauce, brown sugar, soy sauce, ketchup, and pineapple juice in a small bowl. Whisk together until well mixed and set aside.

Add the oil to the instant pot and set it to saute.

Add the green and red bell pepper and cook, stirring occasionally for ⏱️ 5 minutes.

Then add the onions and continue to cook for another ⏱️ 5 minutes until the onions are softened.

Add the chicken cubes, garlic, salt, black pepper, red pepper, ginger, and pineapple to the instant pot. Cook for ⏱️ 1 minute more, stirring constantly. Cancel saute mode.

Pour the sauce into the pot. Stir everything together.

Seal the instant pot valve and set it to manual high pressure for ⏱️ 4 minutes. After the cooking time has elapsed, naturally release the pressure for ⏱️ 10 minutes. Then open the valve to release the remaining pressure. Remove the lid.

Return the instant pot to saute mode. Make a slurry of cornstarch and water and whisk it into the sauce. Allow to simmer for ⏱️ 3 minutes to thicken. Cancel the saute mode.
