Press the sauté function on the Instant Pot and add the olive oil. When the oil is hot, add the chicken and cook until browned, stirring occasionally, for about ⏱️ 5 minutes.

Add the onion and garlic, and cook for an additional ⏱️ 2-3 minutes, stirring occasionally.

Add the carrots, celery, chicken broth, diced tomatoes, thyme, rosemary, and bay leaf. Cancel the sauté function and stir everything together.

Close the Instant Pot lid, and turn the valve to the sealing position. Set the Instant Pot to high pressure for ⏱️ 10 minutes cooking time.

When the cooking cycle is complete, allow the pressure to naturally release for ⏱️ 5 minutes, then carefully turn the valve to the venting position to release the remaining pressure.

Open the Instant Pot lid and use tongs to remove the bay leaf to discard. Add the frozen peas and stir until the peas are heated through (just a couple of minutes).
