This traditional Huevos Divorciados recipe features sunny-side-up eggs, lightly fried corn tortillas, refried beans, and both red and green salsas made from scratch for bold, authentic flavor.

To make the red salsa:

In a medium saucepan over medium-high heat, add tomatoes, serrano chilies, arbol chilies, onion, and garlic, and enough cold water to cover. Bring to a boil, reduce heat, and simmer until tender and cooked through, about 20 to ⏱️ 25 minutes.

Preheat the oven broiler on LOW. Add 4 oven-safe plates to the oven to warm. In a large skillet over medium-high heat, heat oil until shimmering.

Working with 1 corn tortilla at a time, add a tortilla to the hot oil for ⏱️ 5 seconds, then quickly turn over with tongs. Continue frying about ⏱️ 5 seconds longer, then remove and drain on paper towels.

Repeat with remaining 7 corn tortillas, then set 2 tortillas side by side on each of the 4 plates. Spread 1/2 cup refried beans between the 2 tortillas and return all plates to the oven.

Reduce skillet heat to medium-low and let the oil in the skillet cool slightly. In a small bowl, crack 2 eggs. Carefully add the eggs to the skillet, being careful not to break the yolks.

For sunny-side up eggs, cook until the whites have set and the yolks have started to thicken but aren't hard, about ⏱️ 3 minutes. For harder yolks, cover the skillet. Sprinkle the eggs with salt and pepper.

Remove one plate from the oven and lay one egg on each tortilla. Spoon red salsa around the white of one of the eggs and green salsa around the white of the other egg, avoiding the yolk area. Return the plate to the oven to keep warm while frying the remaining eggs for the remaining plates.

Remove the plates from the oven and garnish each with cotija cheese, sliced avocado, and cilantro.
