In a medium bowl, whisk the eggs vigorously until well blended and slightly frothy. In a small nonstick skillet over medium heat, melt the butter until the foaming subsides.

Swirl the pan to coat the surface. Pour the eggs into the center of the pan. Using a rubber spatula, gently push the eggs from one side of the pan to the other as they begin to set.

Continue moving the eggs slowly until soft curds form and the eggs are cooked through, about ⏱️ 3 minutes. Remove from heat and season to taste with salt and pepper if desired.
