In a saucepan over medium heat, combine the shrimp, lemon juice and reserved lemon halves, dill, parsley, sugar, salt, and peppercorns. Add enough water to cover the shrimp by about 1 inch. Bring to a gentle simmer.

Simmer until the shrimp are opaque, pink, and just firm to the touch. Depending on their size, this may take anywhere from 2 to ⏱️ 8 minutes.

Remove from the heat, cover, and let the shrimp stand in the poaching liquid for ⏱️ 2 minutes. Transfer immediately to an ice bath until completely chilled. Drain well, pat dry, and refrigerate until ready to use.
