In a medium bowl, whisk the eggs, water and herbs (if using) vigorously until well blended and slightly frothy. In a small nonstick skillet over medium heat, melt the butter until the foaming subsides.

Swirl the pan to coat the surface. Pour the eggs into the center of the pan. Using a rubber spatula, gently stir and push the eggs around the pan as they begin to set, about 20 to ⏱️ 30 seconds.

Once small curds begin to form and the eggs are mostly set but still slightly soft on top, stop stirring. If using fillings such as cheese, vegetables, or cooked meat, sprinkle them over one side of the omelet now.

Tilt the skillet and use the spatula to fold the omelet over itself, either in half or in thirds. Cook briefly until the eggs are set but still tender, about ⏱️ 30 seconds longer. To remove the omelet, angle the skillet over a serving plate and gently slide or flip the omelet onto the plate. Season to taste with salt and pepper.
