In a food processor, combine flour, sugar (if using), and salt. Pulse to combine.

Scatter shortening over the flour mixture and pulse until the mixture resembles coarse cornmeal. Add butter and pulse until the mixture resembles coarse crumbs with small pea-sized pieces.

Transfer mixture to a bowl. Sprinkle 4 tablespoons ice water over the dough. Stir and press together with a rubber spatula until it begins to come together. Add more water, 1 tablespoon at a time, if needed.

Turn dough onto plastic wrap and form into a disk. Wrap tightly and refrigerate for at least ⏱️ 1 hour.
