Using a pizza wheel or pastry wheel, cut the pie crust into even strips, about ½-inch to ¾-inch wide.

On top of the filled pie, lay 4 to 7 strips parallel to each other, spacing them about ½ inch apart. Fold back every other strip.

Lay one long strip perpendicular across the unfolded strips. Unfold the folded strips back over the perpendicular strip.

Fold back the parallel strips that run under the perpendicular strip. Lay another perpendicular strip next to the first, about ½ inch apart, then unfold the strips back over it.

Continue adding perpendicular strips, folding back and unfolding the parallel strips as you go, until the entire pie is covered with a lattice.

Trim excess dough if needed, then crimp the lattice strips to the bottom crust to seal the edges.
