To fry tortillas:

In a large skillet over medium-high heat, add about ½ inch oil and heat to 350 degrees. Add one tortilla at a time and cook until it begins to blister but is still flexible, about 10 to ⏱️ 15 seconds. Flip and cook the second side briefly.

To make taco shells:

After flipping the tortilla, use tongs to fold it in half. Hold the shape with tongs until it begins to crisp, about ⏱️ 15 seconds. Continue cooking, turning as needed, until golden and crisp. Transfer to a paper towel-lined plate and sprinkle with salt.

To make tostadas:

Fry tortillas flat, turning once, until golden and crisp on both sides, about 30 to ⏱️ 60 seconds total. Transfer to paper towels and season with salt.

Preheat oven to 375 degrees. Lightly brush tortillas with oil on both sides. For taco shells, drape tortillas over two bars of the oven rack. For tostadas, place flat on a baking sheet. Bake until crisp, about 7 to ⏱️ 10 minutes.
