Carefully wash the figs removing all dirt.

Cut the stems off and slice each fig into halves or quarters. The smaller the fig pieces, the quicker they will freeze and defrost.

Line a large baking tray or serving tray with wax paper and place the figs on it in a single layer. The fig pieces should be close together but not touching. You can create another layer of figs separated with a layer of wax paper, as long as they don’t touch.

Place the baking tray in the freezer for at least two hours until the figs are frozen solid.

Remove the frozen figs from the freezer and place them in freezer-friendly bags.
