Place shrimp on a cutting board with the back (where the vein was removed) facing up.

Using a sharp knife, slice lengthwise along the back of the shrimp, cutting about halfway through.

Gently open the shrimp so it lays flatter and wider. Repeat with remaining shrimp and use as desired.
