Wash and sort 1 cup small dried beans such as cowpeas or black-eyes. Place them in a medium heavy-bottomed saucepan; add 5 cups water and discard any peas that float. Add 1 smoked ham hock, 1 medium onion, chopped (about ¾ cup), and 1 dried hot pepper (if using) and bring to a boil over medium-high heat. Reduce to a simmer and cook until peas are tender, but not mushy, adding up to 1 cup more water if necessary to keep peas submerged, about ⏱️ 90 minutes or until 2 cups of liquid remain. Add 1 cup long-grain white rice to pea mixture; cover and simmer over low heat for ⏱️ 20 minutes, never lifting the lid.

Remove from the heat and allow to steam, still covered, another ⏱️ 10 minutes. Remove the cover and fluff with a fork; taste and season, if necessary, with kosher salt and freshly ground black pepper. Serve immediately.
