Toss the carrots in the oil, salt and pepper, arrange in a single layer on a baking sheet and roast in a preheated 425F/220C oven until tender, about ⏱️ 20-25 minutes, turning the carrots half way through.

Heat the oil in a pan over medium heat, add the garlic and ginger and cook until fragrant, about ⏱️ 30 seconds.

Add the honey, soy sauce and vinegar to the pan, mix and turn off the heat.
