Heat oven to 425°F. Core (do not peel) the apples and cut into 1-inch pieces, and toss with lemon juice in a bowl.

Heat the butter in a medium metal-handled skillet over medium-high heat until the butter begins to brown. Add the apples and salt. Cook until apples begin to brown, 3 to ⏱️ 4 minutes. Add the honey and cinnamon.

Transfer to oven and roast until soft, about ⏱️ 20 minutes. Remove cinnamon stick and fork-mash for chunky sauce or puree in a food processor. Chill and serve.
