In a medium-sized skillet over medium heat, add half of the 2 tablespoons olive oil, and 3 whole garlic cloves.

Season the 1 ½ pounds boneless skinless chicken thighs with salt and pepper to taste, and cook for ⏱️ 3-4 minutes on each side until fully cooked. Remove and set aside.

Add the remaining olive oil and 3 teaspoons minced garlic. Cook for ⏱️ 1-2 minutes until tender, and ¼ cup honey and 3 tablespoons stone ground dijon mustard. Add the chicken back to the pan and heat for a couple of minutes more.
