Place milk in a large pot with a deep-fry thermometer attached. Cook over medium-high heat until just starting to foam (do not let boil). Reduce heat and simmer, stirring occasionally, until a thick foam forms on the top and mixture reaches 180°F to 200°F, about ⏱️ 30 minutes. Cool until mixture reaches 110°F to 120°F, ⏱️ 1 hour.

Stir together 1 cup cooked milk and yogurt in a bowl. Return to pot and stir to combine. Cover pot with lid and wrap in warm kitchen towel. Let sit in a sunny, warm spot, without stirring, until thick and tart, 6 to ⏱️ 10 hours. Stir in sugar or honey to desired sweetness.
