Lightly oil a bowl. Whisk together oil, water, salt, yeast, and sugar in a second bowl. Add 4 1/4 cups flour and stir with a wooden spoon until a ball forms. Turn dough out onto a well-floured work surface and knead, adding up to 1/4 cup more flour as needed, until you have a smooth, not sticky, ball, about ⏱️ 3 minutes. Transfer to prepared bowl and cover with plastic wrap. Let rise at room temperature until doubled in size, 3 to ⏱️ 4 hours, or refrigerate for up to ⏱️ 24 hours.

Lightly flour a rimmed baking sheet. Turn dough out onto a well-floured work surface and knead until smooth and firm, about ⏱️ 30 seconds, adding more flour if dough becomes too sticky. Cut dough into 4 equal pieces. Knead each until smooth and pull edges underneath to make a plump ball. Transfer to prepared baking sheet and cover with a lightly dampened dish towel. Let rest at room temperature until doubled in size, ⏱️ 30 minutes to ⏱️ 1 hour. Dough is ready when it feels smooth and returns to shape when pressed with a finger.
