Heat the oil in a medium saucepan over medium-high. Saute the onion and garlic, stirring, until softened and translucent, about ⏱️ 3 minutes.

Add the tomatoes, tomato paste, and the herb sprigs; bring to a bubble, then lower the heat to medium-low and simmer, covered, for ⏱️ 15 minutes, stirring every ⏱️ 5 minutes or so to avoid scorching.
