Homemade Jammie Dodgers
These homemade raspberry jam biscuits are amazing - the sweet, fruity jam inside tastes delicious with the soft, crunchy biscuits. I love dunking them in hot chocolate or packing them as an on-the-go snack!

📝 Preparation Steps

Preheat oven to 180C (350F), fan setting.

Place all of the biscuit ingredients into a food processor and pulse until smooth. Roll the dough into a ball and place in the fridge for at least ⏱️ 30 minutes.

After ⏱️ 30 minutes, remove the dough from the fridge and sprinkle some flour over your work surface.

Roll the dough out to about 1 cm thickness and begin to cut biscuit shapes out - some with a little hole in the middle, and some without.

Once you’ve used all of the dough, place the biscuits onto a lined baking tray and bake for ⏱️ 10 minutes until golden.

Make the jam by placing all of the ingredients into a pan, over a medium heat and cook for ⏱️ 10 minutes. Remove from the heat and pour onto a lined baking tray - set aside in the fridge for ⏱️ 15-20 minutes to set.

Once everything is cooked and cooled - spoon a tablespoon of jam onto a biscuit back, before sandwiching another biscuit on top. Repeat until all of the biscuits are finished.
