In a countertop blender, blend 4 cups of the vanilla ice cream and the orange juice concentrate until well combined. Add red and yellow food coloring, if using. In a medium bowl, place the remaining 2 cups of ice cream and stir until smooth and spreadable.

Spoon 1 ½ tablespoons of the orange mixture into the bottom of 20 (⅓-cup) popsicle molds. Spoon 1 tablespoon of the vanilla ice cream into each mold. Alternate adding the orange mixture and vanilla ice cream until the molds are full, to create a marbled effect. Use a butter knife or a popsicle stick to swirl the mixture more, if you like.

Place the sticks into the popsicles and freeze until solid, 2 to ⏱️ 4 hours.

When ready to eat, run the popsicle molds under warm water and gently wiggle the popsicles out.

Store unmolded popsicles wrapped in plastic wrap or foil for up to 1 month.
