Pat chicken dry with paper towels; sprinkle with salt and pepper. Let stand while you prep the vegetables.

Heat one tablespoon of oil over medium-high heat in a large Dutch oven or soup pot. Sear chicken until golden, about ⏱️ 3 minutes per side. Remove to a plate.

Heat one tablespoon of oil over medium-high heat in the now-empty pot. Add the onions, carrots, and celery, and sauté for ⏱️ 4 minutes, scraping up the golden bits on the bottom of the pan. Add garlic and sauté for one minute.

Add the chicken back to the pot. Add the chicken broth, bouillon, and the spices. Cover the soup to bring to a simmer, then displace the lid so it’s partially covering the pot, with about a one-inch opening. Simmer the soup for approximately ⏱️ 20 minutes, stirring occasionally, or until the chicken is tender enough to shred.

Transfer the chicken to a cutting board and shred it into bite-size pieces once cool enough to handle.

Meanwhile, add the noodles to the soup and bring to a simmer; cook until al dente, approximately ⏱️ 5 minutes. Stir in shredded chicken, and heat through, ⏱️ 1-2 minutes. Taste and season with additional salt and pepper if desired (if the soup is missing something, it's probably salt). Stir in additional chicken broth for a less chunky soup.
