Combine the apples, apple cider vinegar, and water in a large saucepan or Dutch oven. Cook over low heat, stirring often, until the apples start to soften, about ⏱️ 4 minutes.

Cover and simmer over low heat for ⏱️ 10 minutes. Uncover, stir in the cinnamon and salt, cover again, and continue simmering for 10 to 20 more minutes, stirring occasionally, until the apples are very tender and beginning to fall apart.
