Preheat your oven to 350°F. Grease a loaf pan and line it with parchment paper for easy removal.

Place the cottage cheese into a blender or food processor and blend until completely smooth to ensure a soft texture.

In a large bowl, whisk together the smooth cottage cheese, egg, maple syrup (or honey), and vanilla extract until well combined.
