Brown the beef

In a pan, add the ground beef, salt, and spices. Use a wooden spoon or potato masher to break up the beef as it cooks over medium-high heat. Once the beef is well browned, add in the tomato paste along with a splash of water and mix until the beef is glazed.

Make the sauce

In a small bow, mix together yogurt, green chile sauce, and lime juice until homogenous and desired spice/acidity is reached.

Assemble the bowl

Chop the veggies to your desired size, and grate the cheese. To assemble, add the lettuce as a base, then follow with 1/3 of the beef, grated cheese, pickled jalapeños, red onion, and the green chile yogurt sauce. Mix it all up and then eat it with a serving tortilla chips.
