To make the dressing, whisk together the dressing ingredients in a large salad bowl.

Add the onion with a pinch of salt and leave to soften while you prepare the remaining ingredients.

Add the tomatoes, beans, olives, walnuts and parsley. Toss everything together until well combined, then season to taste.

Serve straightaway. Delicious with grilled vegetables, fresh sourdough or a bowl of fluffy bulghur wheat.
